This Alphabet cake is the most elegant birthday treat
Pretty, easy to make, personalised… Alphabet cakes are trending on social media and we can totally understand why!
Depending on the person who is celebrating their big day, you can create any letter of the alphabet you want or even a number. All you need is to get the template on the Internet and print it.
You can also decorate the cake depending on the personality of the birthday boy/girl: macarons, flowers and meringues for a chic girl, cookies and candies for someone with a very sweet tooth…

Alphabet/number cake
Ingredients
For the tart dough
- 2 egg yolks
- 4 tbsp very cold water
- 2 tsp vanilla extract
- 350g plain flour
- 130g caster sugar
- 1/2 tsp salt
- 230g unsalted butter, cold and diced
For the filling
- 225g mascarpone
- 250ml double cream
- 50g caster sugar
- 1 tsp vanilla extract
To decorate
- Berries
- Mini macarons
- Flowers (edible)
- Mini coloured meringues
- Sprinkles
- Candies
Method
1. In the bowl of a food processor, place the flour, sugar and salt. Pulse.
2. Add the butter and pulse using quick bursts, until the butter pieces are no larger than small peas. Add the egg yolks, water and vanilla and pulse just until the dough comes together. Wrap in cling film and refrigerate for 30 minutes.
3. Transfer the dough to a piece of parchment paper and roll it about 4 to 5 mm thick.
4. Using a template, cut out 2 letters or numbers with a sharp knife. Transfer to a cookie sheet and refrigerate for 20 minutes.
5. Preheat oven to 180°C. Bake for about 15 minutes or until the edges start to brown. If needed, cut out the edges of the cake so the letter looks sharp. Let cool completely.
6. Beat all the ingredients for the filling until the mixture forms stiff peaks. Transfer the filling into a piping bag and pipe dollops of the cream beginning with the inner and outer edges of the cookie. Place the second cookie on top and repeat the process with the filling.
7. Decorate with your favourite toppings and keep refrigerated before serving.
