Spring fish
Description:
Zesty white fish with soy sauce and ginger.

Ingredients:
4 large fillets white fish, about 200g each
3-4 tbsp soy sauce
3 garlic cloves, finely grated
Small knob ginger, grated
1 tsp, sesame seeds
2 tbsp vegetable oil
400g spring greens, roughly shredded
Rice or noodles, to serve
Soy sauce, to dip
Method:
Coat the fish with the soy sauce, garlic, ginger and sesame seeds then gently turn to ensure both sides are coated.
Heat the oil in a non-stick wok or frying pan and add the fish along with the marinade.
Sizzle for 3 minutes on each side, until the fish is almost cooked.
Tip in the greens with a splash of water and simmer for 5 minutes, until the greens have wilted.
Serve the crisped fish onto a plate and serve with rice or noodles along with the vegetables and some soy sauce.
