Spinach with mixed cheese filo squares

Savoury spinach and mixed cheese filo squares ideal for sharing.

Ingredients:
2 tbsp olive oil
900g fresh spinach
Bunch spring onions, finely sliced
250g ricotta cheese
200g halloumi, grated
400g feta, crumbled
2 eggs, lightly beaten
2 tbsp dried mint
25g fresh dill, finely chopped
25g fresh flat leaf parsley, chopped
75g melted butter
2 x 270g filo pastry sheets (you will use 9 sheets)
Method:
Preheat the oven to 180°C / 350°F / Gas mark 4.
Heat the oil in a pan set over medium heat.
Add the spinach in batches and allow to wilt then add the spring onions and cook until softened.
Transfer to a large bowl and add the ricotta, halloumi, feta, eggs, mint and fresh herbs.
Stir to combine, season to taste and set aside.
Unfold the filo sheets and cover with a damp cloth to avoid them drying out.
Brush a 30cm x 20cm baking tin with melted butter and line with a sheet of filo.
Brush with butter and repeat until you have a base 3 layers thick.
Spread half the spinach mixture over the filo base.
Repeat step 3, adding a further 3 layers of pastry to the tin, and then topping with the remaining mixture.
Continue layering up the remaining 3 pastry sheets as before, buttering between each addition.
Lightly score the surface in a square pattern.
Brush the top layer with the remaining butter and splash with water.
Bake for 35 minutes, until golden.
Remove from the oven and leave to cool.
Cut into squares and layer onto a serving plate and let everyone help themselves.
