Pita pockets with chicken and salsa
Description:
Healthy light pita stuffed with goujon style chicken and a fresh salsa.
Main ingredients:
Eggs, Chicken, Vegetables, Bread, Wraps/Tortillas, Herbs
Ingredients:
125g granary breadcrumbs
2 tsp paprika
1 tsp dried mixed herbs
400g chicken fillets, cut into strips (skinless)
1 medium egg, beaten
8 wholemeal pitta breads, toasted
200g fresh store bought tomato salsa
Salad leaves, to serve
Method:
Preheat the oven to 200°C / 400°F / Gas mark 6.
Line a large baking tray with greaseproof paper and set aside.
Mix together the breadcrumbs, paprika, herbs and seasoning.
Dip the chicken first in the egg and then coat in the breadcrumbs.
Layer the chicken onto the prepared tray.
Bake for 10-15 minutes or until cooked through.
Pierce a thicker piece of the meat to ensure the juices run clear.
Serve in toasted pitta bread with tomato salsa and salad.
