Open face chicken wraps with guacamole
Description:
These are simple no cook wraps with lovely fresh ingredients and made in moments.
Main ingredients:
Chicken, Vegetables, Wraps/Tortillas
Ingredients:
4 wraps (wholemeal or white)
2 ripe avocados, flesh scooped out with a spoon, stone discarded
4 spring onions, sliced using both white and green end
½ lime, juice
Large handful salad leaves
2 x 240g sliced cooked chicken
6 cherry tomatoes, sliced in half
Method:
In a bowl mix together the avocado with the spring onions and lime juice.
Add some salt and pepper then mix well and set aside.
Layer the wraps with a generous portion each of the chicken slices, salad leaves and cherry tomatoes.
Serve with the guacamole on the side or topped over the wrap if you wish.
