Michelin-Star Chef JP McMahon creates limited-edition pizza with The Dough Bros
Chef JP McMahon has partnered with The Dough Bros to create a limited-edition JP McMahon x The Dough Bros Bolognese Pizza. This collaboration will be running exclusively in The Dough Bros, Galway for the month of February.
This exciting new pizza takes a classic Italian meat sauce, Bolognese, and teams it with Irish artisan and foraged ingredients.
This specially crafted pizza features Bolognese sauce with slow-cooked fennel sausage, smoked Gubbeen cheese béchamel sauce from West Cork, foraged and pickled wild ramsons, cold-pressed Irish rapeseed oil, and sprinkled with Achill Island sea salt.
JP McMahon first experienced a Bolognese dish in the 1980s at Chez Hans in Tipperary, which was an influential moment he credits in his book, An Irish Food Story, as the beginning of his culinary journey.
JP revealed, “Bolognese sauce has a special place in my heart. From the very first time I had it when I was young, it retains a magical aspect in my culinary imagination. It's great to collaborate with the Dough Bros. They're one of the best pizza makers in Ireland, and they showcase wonderful Irish and Italian products. The pizza combines the wildness of the west of Ireland with our shared love of Italian food”.
Ronan Greaney, co-owner of The Dough Bros alongside his brother Eugene, opened up about the collaboration as he stated, “We have worked with JP in the past, catering at Food on the Edge in 2018 and 2024, so it's great to finally make a pizza together. Developing a pizza usually takes time but this one was knocked out pretty quickly, he knew exactly what he wanted to do. We think people are really going to really enjoy it. It is only on special for the month of February, so get on it while ya can!”.
Both JP and The Dough Bros have revealed they are both passionate about incorporating Irish ingredients into their restaurants, with Gubbeen being a shared favourite.
Gubbeen cheese producer Fingal Ferguson commented to explain, “JP, Aniar and The Dough Bros have always been great supporters of small artisan producers. I believe that collaboration always leads to exciting results. Fun on the palate and opening the mind! Little things do make a difference, especially if the extra effort is put in and there are multiple little things that contribute to the overall result. This is what raises the bar”.
JP McMahon x The Dough Bros Bolognese Pizza will be available at The Dough Bros on Middle Street, Galway, and will run throughout the month of February, priced at €16.50.
