
How to make Irish potato bread (also known as fadge) for Paddy's Day
If you have leftover boiled potatoes, you can turn them into a potato salad, but you can also try and make a traditional Irish recipe: a fadge.
Made with only four ingredients, this potato-based bread only takes a few minutes to make and will go really well with eggs and bacon.
Irish potato bread – Fadge
Ingredients
- 4 medium potatoes, peeled and quartered
- 100g flour, plus extra for dusting
- 20g butter, melted
- 1 pinch salt
Method
1. In a large pot, cover potatoes with water and bring to a boil over high heat. Cook until the potatoes are cooked through, about 20 minutes. Drain, return potatoes to pot and mash with a potato masher until smooth.
2. Place mashed potato in a bowl and stir in the rest of the ingredients. Mix lightly until dough forms.
3. On a well floured surface, knead the dough lightly. Cut in half.
4. Using your hands, flatten into a 20cm circle about 5mm thick and cut into quarters.
5. Sprinkle a little flour into the base of the pan and cook for 2 minutes over medium to high heat on each side or until evenly browned. Butter generously and serve straight away.
