Healthy and tasty: chicken, lime and coriander courgetti

Ingredients
- 2 courgettes
- 2 chicken breasts
- A bunch of fresh coriander
- 1 lime
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1 tbsp roasted peanuts, roughly chopped
- 1 tbsp olive oil
- Salt and pepper
Method
1. Cut the chicken into strips or dices and cook in a large pan over medium to high heat, with olive oil. Season with salt, pepper, cayenne pepper and cumin. When the chicken is almost cooked, squeeze half a lime over it and finish cooking.
2. Meanwhile, spiralise the courgettes. When the chicken is cooked, add the courgettes to the pan for about 1 minute, just to warm them up.
3. Toss the courgetti with the chicken. Add the coriander.
4. Serve topped with the chopped peanuts and a lime wedge.
