Grab and go! Five quick breakfasts for busy mums
Being a mum is no small task, and it's easy to get so caught up in making sure your kids are dressed and out the door before nine that you don’t have time for breakfast – which is not good for either you or your family.
We all know that breakfast is the most important meal of the day, (and that it can curb sugary cravings later in the day) – but it is undoubtedly tricky when you're already strapped for time.
So what you really need to do is have something prepared in advance, meaning you cna just grab and go.
To aid you in your quest, we’ve rounded up five quick and simple recipes so you’ll never have to miss breakfast again.
1. Opt for Quinoa instead of porridge
An incredible superfood, this can be made in a huge batch and stored in the fridge for up to seven days. It will also last in the freezer for up to two months.
It is a great alternative to porridge oats and can be used in salads for lunch, or instead of rice for dinner.
Divide up into daily portions, top it off with some honey and berries, a little milk to keep it from drying out and add in some cinnamon for taste.
2. Pre-chopped fruit
If you just want something light in the morning then fruit is the way to go. Simply pre-chop/ peel some of your favourites and pop them into airtight container where they can be stored for up to five days. Things like melon, grapes and berries are ideal and they go well together. Perfect, quick and tasty.
So simple and delicious. Invest in some small yoghurt containers and make up five portions in advance – a large 500g pot is perfect for four to five days. Add some runny honey with blueberries or strawberry for a delicious quick breakfast or snack.
4. Choose boiled eggs
Eggs are a great source of protein and are the perfect on-the-go food. They can be stored in the fridge for up to one week making them ideal for batch cooking. Try wholemeal bread, cream cheese, a mashed boiled egg and some chopped tomato.
It literally takes two minutes to make and you can prepare it the night before. Try Orange Creamsicle: half a frozen banana, 125 ml orange juice and 125 ml Greek yoghurt or Key Lime Pie: half a frozen banana, 250 ml milk and 2 tablespoons lime juice simply blend and go!
