'Goodness over evil': Grieving woman finds healing by giving away ice-cream

Stacey Achterhoff might be a teacher for most of the year but come summertime, she transforms into Mrs. Delicious

That's right, Stacey spends her summers giving out ice-cream around her community. 

But there's a special hook – the ice-cream has been paid for by someone else.   

So how does it work?

Whenever people get a cone courtesy of Mrs. Delicious, they pay for the cone that will be given to the next person – sweet idea, right?

Stacey said that ''people want to know that goodness is prevailing over evil, and they want to be a part of that.''

She cycles around her town of Duluth, Minnesota, on a tricycle with a wooden crate bursting with sweet treats. 

She explains, “I love packing and thinking about what people might like.''

Stacey has spent three summers selling her ice cream while dressed in thigh-high rainbow-striped socks and bright, colourful mismatched shorts and shirts. 

This all started for Stacey after the death of her grandmother, aged 91, in 2009.  

She says, “I’m a person of faith, and what do you do when terrible things happen? You have to figure out where the light is.'' 

Stacey has set up a Facebook page for Mrs. Delicious and the reaction on social media just shows how amazed people are by the great work she is doing.

One person wrote, ''absolutely LOVE your message of love!!''

While another said, ''I met her when she kindly brought her ice cream to a memorial service. She is every bit of what you see here.''
