Dinner inspo: try this quick and easy bacon and mushroom quiche
Also delicious for lunch the next day.
Ingredients
- 1 sheet shortcrust pastry
- 5 bacon medallions
- 250g mushrooms
- 250g spinach
- 1 shallot, finely chopped
- 3 eggs
- 30g crème fraîche
- 500ml milk
- ⅛ tsp nutmeg
- ½ tsp paprika
- Grated mozzarella cheese, to taste
- Salt and pepper
Method
1. In a frying pan over medium heat, cook the bacon, then set aside.
2. In the same pan with a bit of olive oil, fry the shallot. Add the mushrooms, season with salt and pepper and cook for about 10 minutes. Add the spinach and cook until wilted.
3. Meanwhile, prepare the quiche filling. Beat the eggs, add the crème fraîche, milk, salt, pepper, nutmeg and paprika and mix well.
4. Unroll the pastry sheet and place over a round tin, cutting out the excess pastry. Using a fork, prick the pastry. Fill with spinach mixture and the egg mixture. Sprinkle cheese on top and bake for 30 to 40 minutes at 200°C.
