Crispy bacon and potato salad

Description:
This is a nice filling salad that has both plenty of flavour and could be served as a main course with a green salad or along with a light meal.

Ingredients:
650g potatoes, peeled and chopped roughly
1 tbsp vegetable oil
1 onion, peeled and finely chopped
4 rashers back bacon, chopped
4 pickled gherkins, finely sliced
1 tbsp flat leaf parsley

Method:
Boil the potatoes until just tender.
Meanwhile, heat the vegetable oil in a frying pan and fry the onion and bacon until the onion is soft and golden and the bacon crisp.
Drain the potatoes and add to the onion and bacon mixture in the frying pan.
Toss well, drizzle with salad dressing, add the gherkins and parsley then season to taste and serve.
