Chorizo rolls

These fair like rolls are amazing and the kick of paprika throws something different into the mix.

Ingredients:
2 red roasted peppers, drained
500g cooking chorizo (found in most supermarkets-or in the local butcher)
1 loaf French bread, quartered and split down the middle, then sliced into individual portions
100g pesto sauce
Method:
Chop the roasted red peppers finely and set aside in a small bowl.
Cut the chorizo in half lengthways.
Cook it cut-side down on a medium heat in a non-stick pan for a few minutes until sizzling and charred, then turn it over and cook for a further 3-4 minutes.
Preheat the grill to medium.
Toast the slices of bread under the grill.
Add the chopped peppers to the pesto and mix well.
To the toasted breads, add pieces of chorizo, and the pepper and pesto mixture.
