Pancake recipe... and 5 toppings to jazz up Shrove Tuesday
Most of us only ever eat pancakes on Shrove Tuesday, despite being extremely easy to make.
And when we do whip up a batch, most of us stick to the usual sugar and lemon as toppings – not that there is anything wrong with sticking with tradition!
However, this Pancake Tuesday, why not jazz up the basic recipe with six tasty toppings? From bananas to ice cream we've got plenty of ideas to get your tongue watering.
First things first though; how to make basic pancake batter.
Ingredients:
110g plain flour, sifted
2 eggs
200ml milk mixed with 75ml water
1 tsp butter
Method:
- Sieve the flour into a large mixing bowl.
- Make a well in the centre of the flour and break the eggs into it.
- Whisk the egg and flour together.
- Gradually add the milk and water mixture – don't worry about any lumps as they will eventually disappear.
- Continue to whisk until you get a nice smooth batter.
- Melt the butter in a pan.
- Use a ladle to drop the batter into the pan; gently swirl it around from side to side.
- It will only take a minute or so for one side to become golden, before flipping it over to the other side.
Toppings:
1. Chocolate and banana
Considering Pancake Tuesday only comes around once a year, why not treat your kids in the morning. Generoulsy spread your Nutella onto a slightly warm pancake before adding banana slices. Yum!
2. Blueberries and ice cream
If you don't have time in the morning, why not serve your pancakes for dessert in the evening? Blueberries and ice cream work really well together – just make sure you allow your pancakes to cool first.
3. Just jam
Love toast and jam in the mornings? Why not jazz things up by having jam on your pancakes for brekkie instead?
4. Maple syrup
Do it like the Canadians and drizzle a little syrup over your pancakes – it can be a little sweet so don't go overboard!
5. Whipped cream and almonds
Whipped cream is a great alternative if you're not a fan of ice cream. Sprinkle the almonds on top to give it some texture and a little crunch.
