Vegetarian sandwichDescription:
Make a meat free sambo with a variety of delicious fillings to build it up and have a bit of fun.

Main ingredients:
Fruit, Beans, Vegetables, Bread

Ingredients:
2 large handfuls watercress
½ lemon, juice
2 tbsp olive oil
4 tbsp hummus
8 slices granary bread
1 avocado, stoned and sliced

Method:
Mix the watercress, lemon juice and olive oil together.
Spread the hummus over each slice of bread.
Top with the watercress and slices of avocado and then press down and slice in half.
Repeat process and serve with a green salad if you like.
