Grilled fish quesadillas with sour cream and salsa

These flavoursome packed quesadillas are easy to make and filled with prawns, sour cream and salsa.

4 tortilla wraps
320g cooked and peeled prawns
200g sour cream
4 tbsp fresh chopped coriander
60g mature white cheddar, grated
200g tinned sweet corn, drained
Salsa
1 avocado
2 vine-ripened tomatoes, chopped
1 small red onion, finely chopped
Juice of 1 lime
Method:
Chop the prawns roughly then add them to a bowl along with 100g of sour cream, coriander cheddar and sweet corn.
Mix well and season to taste.
Divide the mixture between the wraps, fold in the sides to make parcels and cook on a skillet until everything is warmed through.
Transfer to a plate and repeat until all of the ingredients are used.
Make the avocado salsa by scooping out the flesh with a teaspoon and roughly combining with the tomatoes onion and juice of lime.
Slice the wraps in half and serve with the salsa and some extra sour cream if desired.
