Simple strawberry tart
Description:
A lovely dessert that children simply adore with fresh strawberries a biscuit base and whipped cream.

Ingredients:
Digestive biscuit base
125g finely ground digestive biscuit crumbs
5 tbsp caster sugar
85g butter, melted
Tart
150g caster sugar
225ml water
4 tbsp strawberry jam
4 tbsp cornflour
1kg sliced fresh strawberries, some reserved for decoration
Method:
Prepare the biscuit base by mixing the biscuit crumbs, sugar, melted butter until well blended.
Press mixture into a 20 or 23cm tart tin or pie dish then set aside.
Mix together the sugar, water, jam and cornflour in a medium large saucepan.
Boil for one minute, then remove from heat.
Stir in the sliced strawberries, and toss through until well coated.
Pour into the digestive biscuit base and chill until well set.
To serve, top with a smooth layer of whipped cream and more strawberries to decorate.
