
6 pancake recipes and decorating ideas perfect for Pancake Tuesday
Pancake Tuesday is here at last, and we couldn’t be more delighted. To help your kids get into the Pancake Day spirit, why not try your hand at one or two of these fun and foolproof recipes, courtesy of Annabele Karmel?
No matter what your kitchen expertise is, there’s a pancake recipe for everyone!
Caterpillar Pancakes
Ingredients:
200g self-raising flour
1 tbsp caster sugar
3 eggs
175ml milk of choice
1 tsp sunflower oil
honey, to drizzle
To decorate
2 strawberries
handful of blueberries
Method:
Measure the flour and sugar into a mixing bowl.
Make a well in the centre and crack in the eggs.
Carefully pour half the milk into the bowl and whisk everything together until you have a smooth batter. Slowly add the rest of the milk, whisking as you go.
Place the oil in a frying pan over a medium heat. Add 2 large spoonfuls of the mixture and fry for 1–2 minutes on each side, until lightly golden and cooked through.
Remove from the pan and place on a plate. Cover with a tea towel to keep warm while you make the rest. Continue until all the batter has been used up.
Line up the pancakes to make a breakfast caterpillar – use slices of strawberry for the legs and mouth, and blueberries for eyes.
Bear Pancake Stack
Ingredients:
175g self-raising flour
1/2 teaspoon bicarb of soda
pinch salt
20g caster sugar
1 egg, beaten
150mls buttermilk
150mls whole milk
40g butter, melted
1 small ripe banana, mashed
To decorate:
2 blueberries
Chocolate writing icing
Chocolate chip
Cocktail sticks
Method:
Measure the flour, bicarb, salt and caster sugar into a mixing bowl. Add the egg, buttermilk, milk, butter, and mashed banana. Whisk together until smooth.
Heat the oil in a large frying pan. Add large spoonful’s of the mixture to the pan. Fry for 2/3 minutes, then flip over and fry on the other sides for 2 minutes. Make 8 medium sized pancakes.
Use remaining mixture to make 3 small pancakes for the bears nose and ears
Arrange the pancakes in a stack and use 2 cocktail sticks to create the bears ears. Stick 2 blueberries with writing icing as the bears eyes and create the mouth with a choc chip for the nose & draw a mouth with the chocolate writing icing.
Baby’s First Pancake – Banana, Apple & Yoghurt Pancakes
Ingredients:
1 egg
175 g/6 oz Greek yoghurt
50 ml/2 fl oz milk
100 g/4 oz self-raising flour
1 overripe banana, peeled and mashed
1 sweet eating apple, peeled, cored and
grated
sunflower or vegetable oil, for cooking
Method:
Crack the egg into a bowl and whisk with the yoghurt and milk. Sift in the flour and whisk until smooth. Add the banana and apple and mix well.
Heat a little oil in a large frying pan. Spoon small amounts of batter into the pan. Fry for a few seconds until bubbles appear on the surface. Flip over and cook on the other side for one minute until lightly golden.
Hunny Bunny Pancakes
Ingredients:
150 g self-raising flour
1 tsp baking powder
2 eggs
150 ml milk
25 g caster sugar
20 g butter
1 tbsp sunflower oil
125 ml double cream
3 bananas, sliced
honey or maple syrup
Method:
Measure the flour, baking powder, caster sugar, eggs and milk into a mixing bowl. Whisk until you have a smooth batter.
Heat a little butter and oil in a frying pan. Spoon tablespoons of batter into the pan to make fairly large round pancakes for the body. When bubbles appear, flip the pancakes over and cook on the other side for a few minutes. In the same way, make smaller pancakes for the face and the paws of the rabbit. Continue to cook the pancakes until all the batter is used up, adding more butter and oil to the pan as and when necessary.
Arrange the pancakes on plates to make the shape of a bunny and decorate with slices of banana for the ears and the feet.
Whip the cream until soft peaks form, then pipe a tail onto each of the bunnies.
Drizzle with a little honey or maple syrup.
Mini Pancakes with Banana & Oats
Ingredients:
1 ripe banana, mashed
100g porridge oats
2 eggs
1 ½ tsp bicarbonate of soda
125ml milk
½ tsp vanilla extract
25g self raising flour
Method:
Measure all of the ingredients into a processor. Whiz until smooth and pour into a jug.
Heat a little oil in a frying pan. Fry spoonfuls of the mixture for 1 to 2 minutes each side.
Banana, Blueberry & Coconut Pancakes
Ingredients:
1 ripe banana
1 egg
50g porridge oats
150ml milk
20g desiccated coconut
50g blueberries
a few drops of pure vanilla extract
Generous knob of butter
Method:
1. Place all the ingredients, except the blueberries, into a jug. Blend until smooth using an electric stick blender. Add the blueberries.
2. Heat a little oil in a large non-stick frying pan. Add the butter and when it is foaming, add large heaped tablespoons of the mixture to the pan. Cook for 2 minutes, then flip over and cook for another 1–2 minutes until golden brown and cooked through. (You should be able to get 5–6 pancakes in the pan at one go, so cook in batches.)
